Dough:
In a bowl, dissolve the yeast in the warm milk.
In another bowl, mix the flour, sugar, salt and melted butter.
Add the egg, egg yolk and milk with yeast to the dry mixture and knead well until you get a smooth dough.
Cover the bowl with a damp cloth and let it rest in a warm place for about 1 hour, or until it doubles in size.
Filling:
While the dough is resting, prepare the filling. Peel the apples, remove the core and cut into small cubes.

On a floured surface, roll out the dough with a rolling pin until it forms a rectangle.
Spread the apple filling over the dough, leaving a free edge.
Roll the dough like a Swiss roll and brush the surface with the egg yolk mixed with milk.
Baking:
Cut the Swiss roll into slices about 2 cm thick.
Place the slices on a greased and floured baking sheet.
Bake in a preheated oven at 180°C for about 20-25 minutes, or until golden brown.
