Baked Cauliflower Cheese Recipe

Instructions
Prepare the Cauliflower
Preheat your oven to 200°C (392°F).
Bring a pot of water to a boil, add the salt, and blanch the cauliflower florets for 5 minutes.
Drain thoroughly and pat dry with a kitchen towel to remove excess moisture.
Roast the Cauliflower
Spread the cauliflower florets on a baking sheet and drizzle with olive oil. Toss to coat evenly.
Bake in the preheated oven for 10 minutes, or until slightly golden.
Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, cream, a pinch of black pepper, and half of the grated Parmesan cheese.
