Preheat your oven to 375°F (190°C).
In a small bowl, mix together the salt, black pepper, paprika, and dried thyme.
Rub the seasoning mixture all over the pork chops, making sure they are evenly coated.
Sear the pork chops:
Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat.
Sear the pork chops for 2 to 3 minutes per side until browned. This helps seal in the juices and adds a delicious crust.
Step 2: Prepare the potatoes
Layer the potatoes and onions:
In a large baking dish, arrange the potatoes and sliced onions in an even layer.
Drizzle with 1 tablespoon of the olive oil and sprinkle with a pinch of salt and pepper.
Add the cheese:
Sprinkle half of the shredded cheese over the potatoes and onions.
Step 3: Assemble and Bake
Arrange Pork Chops:
Place the pan-fried pork chops on top of the potato and onion layer in the baking dish.
Add Cream and Garlic:
In a small bowl, stir together the heavy cream and minced garlic.
Pour the cream mixture over the pork chops and potatoes.
Top with Remaining Cheese:
Sprinkle remaining shredded cheese on top.
