Add Food Coloring
Add a few drops of blue food coloring and mix until you reach your desired shade of blue. Start with a small amount and gradually add more as needed.
Shape the Truffles
Scoop out about 1 tablespoon of the mixture and roll it into a smooth ball. Place each ball on a baking sheet lined with parchment paper. Repeat with the remaining mixture until all truffles are shaped. Freeze the truffles for about 30 minutes, or until firm.
Coat in White Chocolate
In a microwave-safe bowl, melt the white chocolate chips in 20-second intervals, stirring between each until smooth. Using a fork or dipping tool, dip each truffle in the melted white chocolate, allowing any excess to drip off. Place the coated truffles back on the parchment-lined sheet.
