Melt In Your Mouth Beef Tips with Mushroom Gravy

Prepare the Beef:

Season the beef tips with salt and pepper.

Toss the seasoned beef in flour to coat evenly.

Sear the Beef:

In a large skillet over medium-high heat, melt the butter.

Add the beef tips in batches, searing on all sides until browned and crusty. Remove to a plate and set aside.

Cook the Onions:

In the same skillet, add the diced onions and cook briefly for about 2 minutes, scraping up any browned bits from the bottom of the pan with a wooden spoon.

Slow Cooker Method:
Transfer to Slow Cooker:

Transfer the seared beef and onions to the slow cooker.

Add mushrooms, garlic powder, onion powder, dried thyme, rosemary, bouillon cube, Worcestershire sauce, bay leaf, pepperoncinis, and 2 cups of beef stock.

Cook:

Cover and cook on high for 3-4 hours or on low for 6-7 hours.

Thicken the Gravy:

30 minutes before cooking time is up, whisk the cornstarch into 3 tablespoons of water and stir into the slow cooker.

Cover and continue cooking for the remaining 30 minutes.

Season to taste with salt and pepper before serving.
