Mother made this for dinner, and it was a roaring success, had to nab the recipe

– 8 slices of soft white bread, crusts removed
– 2 large eggs
– 1/4 cup milk
– 1 teaspoon vanilla extract
– 1 tablespoon granulated sugar
– 1 teaspoon ground cinnamon, plus extra for sprinkling
– Butter, for frying
– Cream cheese, softened, for spreading
– Confectioners’ sugar, for dusting
Directions
1. Flatten each slice of bread with a rolling pin to about 1/4 inch thickness.
2. In a shallow dish, whisk together eggs, milk, vanilla, sugar, and cinnamon until well combined.
3. Spread each slice of bread with a thin layer of cream cheese.
4. Tightly roll up each slice of bread and dip into the egg mixture, ensuring all sides are coated.
5. Melt some butter in a skillet over medium heat. Place the roll-ups seam side down and cook until golden brown on all sides, approximately 2 minutes per side.
6. Remove the roll-ups from the skillet, and while still warm, sprinkle with a mix of cinnamon and sugar, if desired.
7. Finish by dusting with confectioners’ sugar right before serving. Serve warm.
Variations & Tips
– For an autumn twist, add a dash of pumpkin pie spice to the egg mixture and fill the roll-ups with a dollop of pumpkin puree mixed with cream cheese.
– If you’re in a rush, pre-make the roll-ups the night before, refrigerate, and quickly fry them up in the morning.
