1- Prepare the Red Velvet Cake:
Preheat the oven to 350°F (175°C) and grease and line an 8-inch round cake pan.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
In another bowl, combine vegetable oil, buttermilk, egg, vanilla extract, red food coloring, and vinegar. Mix until smooth.
Add the wet ingredients to the dry ingredients and stir until just combined.
Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean. Let it cool completely.
2- Prepare the Cheesecake Layer:
Reduce the oven temperature to 325°F (160°C).
In a large bowl, beat the softened cream cheese and sugar until smooth.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Pour the cheesecake mixture into a greased 8-inch springform pan and bake for 40-45 minutes, or until set. Let cool and refrigerate for at least 2 hours.
