Apple Crisp Cheesecake

In a large mixing bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until the mixture is smooth and creamy. Add the eggs one at a time, beating on low speed just until each egg is incorporated. Be careful not to overmix, as this can cause the cheesecake to crack. Pour half of this cheesecake filling over the prepared crust in the springform pan.

Layer with Apple Filling:
Spread half of the cooled apple filling evenly over the cheesecake layer. Pour the remaining cheesecake mixture on top and smooth it out. Finish by adding the rest of the apple filling over the top.

Add the Crisp Topping:
In another bowl, mix together the flour, oats, brown sugar, and cinnamon. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture becomes crumbly and resembles coarse crumbs. Sprinkle this mixture generously over the top of the cheesecake.
